mmmm.... Turkey Chili |
This recipe is one that I go to over and over. I call it a T.H.E. go-to because it is Tasty, Healthy, and Easy. I love to make this low calorie, healthy chili when the weather is cold. I make a big pot (have even doubled the 20-serving recipe) and freeze many smaller portions so it is always on hand.
I have been making this recipe for years. I originally got this recipe from weight watchers (it's one point per serving). Following the recipe makes 20 servings.
One-Point Hearty Chili--
10 0z. extra lean ground turkey breast (I use 1 lb. or whatever is packaged)
1 medium onion, diced
2 (28- ounce) cans diced tomatoes
2 medium zucchini, diced
2 medium yellow squash, diced
1 (15-ounce) can black beans, rinsed and drained
2 (15-ounce) cans fat-free, reduced-sodium beef broth
4 celery stalks, diced
2 green bell peppers, diced
1 (1 1/4 ounce) package dry chili seasoning
Spray a large nonstick skillet with nonstick spray. Set over medium-high heat. Add the turkey and onion and saute until browned, about 5 minutes.
Transfer the browned turkey and onion mixture to a large soup pot and add the tomatoes, zucchini, squash, beans, celery, bell peppers, and chili seasoning. Bring to a simmer over medium heat. Continue to simmer until the vegetables are tender, about 30 minutes.
Per serving-- (1 cup): 76 calories, 1 g fat, 0 g sat. fat, 8 mg chol., 270 mg sodium, 11 g carb., 3 g fiber, 7 g protein, 45 mg calcium. 0-1 point per serving.
