I was first introduced to this recipe on the Beachbody Ultimate Reset.
I love it because it is easy to make, tasty, filling, and versatile.
We have had a very hot beginning to Fall here with the temperatures hitting ninety-one degrees in the last two days. Days like that are perfect for a refreshing cold soup.
The weather will be changing quickly (rain predicted tomorrow) so then it can be enjoyed hot.
The recipe is basically zucchini, cashews, and water; with a choice of herbs thrown in for added flavor.
So you get an easy way to eat vegetables. The cashews are a great thickening agent that add protein and fiber , and a mild flavor, instead of using flour or cornstarch that don't have that nutritional value.
The following recipe is for one serving. I usually quadruple it so I can share it or enjoy it more times myself.
- -1 large or 2 small zucchini, cut into chunks and steamed
- -1/4 cup raw cashews
- -Himalyan Salt or Bragg Liquid Aminos (to taste)
- -Herbal seasoning or fresh herbs, like basil, or dill (optional to taste)
Soak cashews in enough water to cover for 1 hour, then drain. Combine cashews, zucchini, salt or Liquid Aminos, and seasonings in a blender and mix until smooth, adding water as needed for desired consistency. Pour into saucepan and reheat gently but do not boil.
* I chose to add fresh basil and just a tiny bit of mint since they are both growing in my garden now.
This can be easily made into a chunky soup by adding more steamed vegetables (great use for leftovers) .
